Layered Salad

MINESTRONE SOUP

Olive Oil

Ingredients

1/4 cup each of Rosemary, basil, oregano, thyme -- all dried
1/2 of a medium brown onion, chopped
2 cloves fresh garlic, chopped
1/2 cup fresh Italian parsley, chopped
1/2 dry cup kidney beans, soaked overnight
1/2 dry cup garbanzo beans, soaked overnight
1 16-oz can of stewed tomatoes
1 16-oz can of tomato sauce
2 cups of cubed beef or wheat meat (seitan)
1 cup of fresh green beans
1 cup cooked risotto or similar small “rice” pasta
2-3 tablespoons extra virgin olive oil, adjust as needed

Method

Heat the oil, sauté the onions until transparent, add the dried herbs, beef or wheat meat, garlic, parsley and sauté until the meat is very brown.
Add remaining ingredients with the exception of the rice pasta and green beans.
Cook for 5 minutes and bring to a boil.
Fill the pot two inches from the top with water, cook for 1-1/2 to 2 hours
15 minutes before it is finished, add the cooked risotto and green beans
Cook for remainder of time and serve
